I have always wanted to know how this slicing is done. I have cleaned millions of fish in my life (grew up fishing with the family on the weekends) and have never worked out how to cut fish this way. Do they remove the bones too?
It is the best way to cook fish on the BBQ - especially Saba. YUM!!
I think they do remove the bones - but I imagine that it just takes a lot of practice to be able to slice this way.
I’ll have to ask a fishmonger next time I’m down in Atami.
